Warm and filling, this healthy soup is naturally gluten and dairy free and good for cold winter days and nights
Prep- 10 minutes. Cooking time-30 minutes. Serves 4
Ingredients
- 1 medium-large onion chopped
- 2 cloves garlic chopped
- 500g peeled chopped sweet potato
- 2 carrots (or roughly 1 cup chopped)
- 200-300g chopped broccoli
- ½- 1 cup fresh basil leaves (optional)
- 1 tbs olive oil
- 1 litre vegetable stock (home-made or Massel)
Method
- Heat oil in pot/ deep pan and cook onion until transparent (5-7 mins)
- Add garlic while cooking onion (about 2 minutes in)
- Next, add sweet potato, carrot and stock to pot plus some salt and pepper to taste, cover and bring to the boil.
- Then reduce heat to simmer for approximately 15 minutes or until carrot is tender.
- Add broccoli to the pot for a further 2-3 minutes to lightly cook.
- Turn off heat, stir in basil, then blend in batches in a Thermomix or blender.
- Return to the pot to heat through
- Serve with crusty bread of choice. A dollop of Greek yoghurt can also be gently stirred in just before eating for a slightly creamier soup.
